My perfect blueberry pancakes this morning. Layered and topped with unsalted almond butter, blueberry sauce (just frozen blueberries + plain Greek yogurt + raw honey), blueberries and almonds! :)

First time making oatmeal in a jar! Mashed banana chia oatmeal in an almost empty peanut butter jar. Layered with strawberries, bananas, frozen blueberries, Greek yogurt & granola. This is cooked oatmeal, NOT overnight oats! Soooo yummy!!

Late but Sunday’s breakfast! Gluten-free blueberry pancakes! Really easy it’s just:
- 1 banana
- 2 tb oats
- 1 egg
- blueberries (I used frozen)
Blend the first three ingredients together and fry on a non-stick pan (or use a little bit of coconut oil). While frying, add in a few blueberries to each pancake. I topped it with more frozen blueberries, plain Greek yogurt, almonds and natural maple syrup.

Made my green monster pancakes again! Click here for the original recipe. But I only had half a banana today so instead, I did 2 tb of oats and 1/2 a banana! The pink ‘sauce’ is just strawberry yogurt. I blended some Fage Greek yogurt with some strawberries, raw honey, and a small splash of almond milk to get it blending. Layered it with dark chocolate peanut butter, the sauce, strawberries and topped it with some almonds and dark chocolate shavings! No syrup needed because of the raw honey in the sauce! :)
