Late but Sunday’s breakfast! Gluten-free blueberry pancakes! Really easy it’s just:
- 1 banana
- 2 tb oats
- 1 egg
- blueberries (I used frozen)
Blend the first three ingredients together and fry on a non-stick pan (or use a little bit of coconut oil). While frying, add in a few blueberries to each pancake. I topped it with more frozen blueberries, plain Greek yogurt, almonds and natural maple syrup.
